Enchiladas

Ingredients

  • 2 eggs
  • 1 bunch spinach
  • 3 tortillas
  • Salsa verde
  • 3-5 cherry tomatoes
  • Cilantro
  • Sarai's Tahini Honey

 

Instructions

  1. In a medium-sized nonstick skillet, add some coconut oil and heat up.
  2. Add the eggs, spinach and scramble together.
  3. Once cooked, warp the scramble with the tortillas.
  4. Add salsa verde and Tahini Honey on top
  5. Garnish with chopped cherry tomatoes and coriander. Enjoy!
